About the Position
π½ Opportunity
Badrutt's Palace is hiring a Sushi Chef for Matsuhisa, its Nobu-style restaurant, to run the sushi counter inside the open show kitchen for winter 2026/27 (late November through end of March). This is a specialist call: a minimum of 8 years' experience as a sushi chef with references, plus at least a year specifically inside a NOBU or Matsuhisa operation.
π¨βπ³ Role & Responsibilities
Prepare and present sushi and sashimi in the Matsuhisa style, to full quality standard
Create new rolls and dishes, continuously evolving the menu
Advise and engage directly with guests at the sushi counter, inside the open show kitchen
Maintain HACCP-standard hygiene and cleanliness
π ChefJobs Abroad Analysis
Working the counter in an open show kitchen is a different job from sushi service on a closed line β you're cooking and hosting at once β which is exactly why 8+ years and, specifically, prior NOBU/Matsuhisa-brand experience (not just sushi experience generally) is non-negotiable here. This St. Moritz outpost carries the brand's exacting technique standards into one of Europe's most prestigious alpine hotel settings, with the same strong seasonal package as the hotel's other kitchen roles (13th-month pay, 5 weeks holiday). This is a senior specialist move, not an entry point β the right trade-up for a sushi chef who already has the Matsuhisa/NOBU pedigree and wants it on a five-star Swiss stage.
