Sushi Den Helder, a contemporary sushi restaurant at Kroonstraat 49 pairing traditional technique with fresh, premium ingredients across nigiri, sashimi and specialty rolls, is opening four Independent Chef-I positions at once โ a real kitchen build-out, not a single hire, in a coastal town not typically known as a sushi destination. That combination of scale (four roles) and specialism (precision raw-fish work rather than general kitchen cooking) is the hook: this is a chance to build a specific technical craft in a market with less competition for it than Amsterdam or Rotterdam.
๐จโ๐ณ Role & Responsibilities
Independently prepare lunch and dinner dishes, including nigiri, sashimi and specialty rolls
Carry out precise mise en place โ cutting, portioning and preparing fish and other ingredients to sushi standard
Ensure the quality, taste and presentation of every dish
Apply and comply with HACCP and food safety regulations, with the added rigour raw-fish handling demands
Manage inventory: ordering, receiving and checking incoming stock, including freshness checks on fish
Clean and maintain kitchen equipment and workspaces
Contribute ideas for recipes, menu updates and more efficient kitchen processes
Supervise compliance with regulations and oversee the work of kitchen assistants
