About the Position
๐ฝ Opportunity
Noku is a 50-villa resort on Kuda Funafaru in Noonu Atoll, part of the Vignette Collection, and it's hiring a senior Executive Sous Chef. At 50 villas the property is intimate by Maldivian standards, which changes the job: you'll know the guests, the suppliers and the whole kitchen by name. A line in the posting that stands out is event work, planned with F&B leadership both on the property and overseas. Pay is not advertised.
๐จโ๐ณ Role
- Assist the Executive Chef in directing F&B kitchen and stewarding operations
- Maintain culinary standards, quality and consistency across all food outlets
- Work with Purchasing and the Financial Controller on food specifications, purchasing and inventory
- Monitor departmental costs and help carry out cost-saving initiatives
- Oversee equipment use, maintenance, safety and sanitation
- Train staff on hygiene and safety and run regular inspections
- Plan F&B events with the F&B Manager and Executive Chef, on-property and overseas
๐ ChefJobs Abroad Analysis
Small-footprint resorts give a senior chef something large ones can't: visible influence. With roughly 50 villas, the executive sous isn't buried under layers, and overseas events mean the occasional trip off the island. The trade-off is the usual one for Maldivian kitchens: logistics are planned weeks ahead, and your world is the island. It's a good fit for an experienced executive sous or senior sous who wants to be the day-to-day engine of a boutique resort, and not a fit for anyone who wants to cook only and leave purchasing and audits to others.
