About the Position

🍽 Opportunity The Nautilus Maldives — an all-villa, no-set-restaurant-hours resort where guests dine wherever and whenever they want rather than around a fixed schedule — is hiring a Chinese Specialty Chef to build out its Chinese cuisine program from the ground up, reporting directly to the Executive Chef. The hook here is guest-facing as much as culinary: this isn't a chef who cooks and disappears into the kitchen, but one who personally engages with Chinese guests to shape their dining experience, in a resort set inside the Baa Atoll UNESCO Biosphere Reserve where the produce, the reef, and the whole operating rhythm are built around that protected-nature status. 👨‍🍳 Role & Responsibilities Prepare, cook, and present authentic Chinese cuisine to luxury hospitality standard, with tight consistency in taste, presentation, and portion control Develop seasonal and signature Chinese dishes, and maintain standardised recipes with accurate food costing Personally engage with Chinese guests to understand preferences and build personalised dining experiences — a genuine hospitality role, not just a cooking one Promote Chinese cuisine through special menus and events, and feed guest feedback back to the Executive Chef Run inventory control and food waste monitoring against company cost targets Ensure full HACCP compliance, proper FIFO storage, labelling, and temperature control Deliver hands-on training to the wider kitchen team on wok technique, authentic ingredients, and Chinese culinary traditions Mentor junior chefs through daily coaching, and support other kitchen sections when Chinese-specific demand is lower Assist with banquets, VIP functions, and special events alongside the Executive Chef and Sous Chef team 🌎 ChefJobs Abroad Analysis Baa Atoll's UNESCO Biosphere Reserve status isn't just a marketing line — it means genuinely pristine reef diving, protected marine life (manta rays and whale sharks show up seasonally), and an operating culture built around sustainability that shapes everything from sourcing to waste management on property. Requirements
