About the Position
๐ฝ Opportunity
Madurai Masala Cafe, on Bisonspoor in Maarssen, is hiring four Independent Chef-I roles to cook the specific regional cuisine of Madurai and Tamil Nadu โ hand-picked spices, slow-cooked curries, and a menu the owners describe as a tribute to their ancestors rather than a generalized "Indian menu." That regional specificity is the real hook here: most Indian kitchens hiring in this market lean North Indian tandoori and curry, so a cafe built specifically around Tamil Nadu's culinary tradition, hiring four cooks at once to grow into it, is a genuinely different opportunity to learn a less common regional cuisine properly.
๐จโ๐ณ Role & Responsibilities
Prepare ingredients and assess the quality of products before they go into a dish
Apply basic cooking techniques and prepare/present dishes to recipe and quality standards
Carry out preparatory work (cutting, mixing) and intermediate quality control
Manage inventory and ordering, and keep the kitchen and equipment clean
Professionally supervise kitchen assistant(s), including input on menu composition, changes to the menu card and working methods
Contribute ideas for recipes, menu updates and more efficient processes
Supervise compliance with regulations and the work of assistants
๐ ChefJobs Abroad Analysis
Maarssen sits along the Vecht river just outside Utrecht โ small-town, residential, built around the Bisonspoor shopping strip rather than a canal-ring tourist circuit, and a genuinely quieter place to settle than the city listings in this batch. What sets this kitchen apart is specificity: Tamil Nadu and Madurai's cuisine is spice-forward and slow-cooked in ways that differ meaningfully from the North Indian tandoori and curry standard found at most competitors, and the owners' own language โ memories, ancestors, a "true Indian home" โ signals a kitchen run on family recipe rather than a franchise template. For a chef who wants a resume line in a South Indian specialization that's genuinely less common in the Dutch market, and who'd rather live along a quiet river town than compete for space in central Amsterdam, that combination is worth the look.
โ
Best Fit
Cooks who want to specialize in South Indian / Tamil Nadu cuisine, a rarer skill set in this market than North Indian tandoori cooking
Chefs who want real people-management experience โ this role supervises assistants and shapes the menu, not just executes it
Anyone who'd rather settle in a quiet Vecht-river town near Utrecht than live in central Amsterdam
Candidates comfortable submitting a full application letter alongside a CV, not just a CV
Those joining a four-person hiring wave at a kitchen investing in its team, not backfilling one departure
Speakers of English or Dutch drawn to a family-recipe-driven kitchen over a generic templated menu
Not a fit for chefs seeking fine-dining pace or plating, or those unwilling to learn Tamil techniques distinct from the North Indian cooking they may already know
