About the Role
A grand luxury hotel in the heart of Tokyo's Marunouchi district is seeking a Chef de Partie to join its flagship French-Japanese fine-dining restaurant.
The Setting
Our 22nd-floor dining room overlooks the Imperial Palace gardens. Service is silent, precise, and choreographed — the kind of room where cutlery is placed by ruler.
What You'll Do
• Run your own station (rotating: poisson, viande, garde-manger) under the Sous Chef
• Execute a constantly evolving 9-course tasting menu
• Take part in daily R&D sessions with our Head Chef
• Liaise with our Tsukiji and Toyosu market suppliers each morning
What We're Looking For
• 3+ years in starred or hotel fine-dining kitchens
• Impeccable knife skills and station discipline
• Curiosity about Japanese ingredients and technique — no Japanese language required to start, but lessons are provided
• Right to work in Japan or willingness to relocate on a sponsored visa
What We Offer
• ¥4,800,000–¥5,600,000 + bi-annual bonus
